SALMAON VINAIGRETTE SALAD!!!


  

Ingredients:

8        Cups salad greens in small pieces
1 1/2  Cups fresh blueberries
1         Pound salmon fillet, poached Lemon Zest to taste

For The vinaigrette:

2          Tbsp fresh lemon juice
2          Tbsp white vinegar
1          Tbsp fresh chives
1/2      Cup olive oil
            Salt and pepper to taste

Method:

1. Divide salad greens on four salad plates.
2. Divide salmon and arrange on greens.
3. Sprinkle on the blueberries.
4. Top with lemon zest.
5. In a jar with a lid, add all the vinaigrette ingrediebts, and shake well.
6. Serve salad chilled with the dressing alongside.

Serves: 4
