Mexican Chicken Salad!!




Ingredients:

  • 2 cups-up chicken (cooked)
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped carrot
  • 2 tbsp cilantro
  • 2 tbsp finely chopped red bell pepper
  • 2 tbsp capers (drained)
  • 2 tbsp lemon juice
  • 1/2 tsp ground cumin
  • 1/4 cup finely chopped onion
  • 1/4 cup tabasco sauce
  • 1 avocado, peeled and cut into wedges
  • lettuce leaves
  • paprika
Method:
Toss all ingredients except avocado, lettuce and paprika. Serve on lettuce leaves with avocado wedges. Sprinkle with paprika.
